Seasoned Beans

  • 1 lb. pinto beans (picked, washed, and place in slow cooker overnight)
  • After those are cooked, add:
  • 1 med. onion, diced
  • 1/2 c green pepper
  • taco or chili seasoning
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 16-oz jar of salsa or 1 can of diced tomato
  • Optional: meat substitute (tofu or soy crumbles)

Serve these beans over the brown rice, then top with your choice of fresh veggies, like tomato, cucumber, lettuce, black olives, red onion, scallion, and cilantro, with a nice squeeze of lime juice for dressing.
