- 3 large sweet potatoes, peeled and sliced thickly
- 1 tbsp Earth Balance vegetable spread
- ½ c raw cane sugar or honey (choice of sweetener)
- 1 tsp coriander and cardamom (cinnamon and nutmeg) to taste
- 1 c water
- ½ tsp vanilla flavoring
Place the Earth Balance in an electric skillet or large stovetop skillet. Allow it to melt, then add the sweet potatoes. Add the sugar, spices, water, and vanilla. Cover and cook until desired tenderness.
